Chicken breasts can often be dry, overcooked, and chewy if not cooked correctly.
For this recipe, you will be able to roast chicken breasts and enjoy the juiciness and tenderness which is the best way to enjoy them!
The recipe is easy, and quick to make, just be sure you know the rough weight of the chicken and the thickness.
As a rule, if you want to cook the chicken faster and evenly, you need thinner pieces of breast meat.
Sometimes you can get huge pieces of breast meat, so don't be afraid to slice them in half lengthways to reduce the thickness, or take a meat hammer and gently pound them so they are not as thick.
How do you bake chicken without drying it out?
Adding some olive oil, and some seasonings, particularly sauces or herbs which contain a small amount of moisture will add to your chicken breast staying moist during baking.
How do you keep chicken breast moist when baking?
The trick is not to overcook the chicken, and to make sure it is roasted at the right oven temperature for the correct amount of time. As always, it's a good idea to add a drop of olive oil and some seasonings which will give the breasts a coating to keep the moisture in.
Should I cover chicken when baking or can I cook chicken without foil?
No, this isn't necessary, so long as you stick to the correct temperature and cook time, but you can if you wish.
Does baking chicken in foil keep it moist?
You can certainly use foil during baking, particularly if you want to steam the chicken breast, for example, if you are adding some vegetables such as carrots to the pan, covering the pan will trap any steam and give extra moisture.
What can you Season chicken with?
Use the seasoning blend we've listed below in the ingredients. Alternatively, you can use a Jerk Seasoning blend, or a Cajun Spice Mix.
What herbs go well with chicken?
You can also use a variety of fresh or dried herbs, such as Tarragon, or rosemary or go Oriental with a mix of lemon grass, cilantro and garlic.

2 Chicken breasts
The Seasoning
½ teaspoon fresh ground pepper.
½ teaspoon salt
¼ teaspoon cayenne pepper
¼ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon dried thyme
½ teaspoon dried chili peppers (optional)
1Tablespoon Sweet Chili Sauce (Optional)
1 tablespoon olive oil
Instructions
Preheat Oven to 425 F or 220C
Make up the seasoning blend by adding them all to a bowl and combining.
In a shallow dish, add the chicken breasts, olive oil, and seasoning blend and rub so the chicken is completely covered.
At this point, you can place these in sealed bags and freeze if your chicken hasn’t already been frozen.
Place the chicken breasts on a baking tray lined with foil (for easier cleaning later).
Bake Times as follows
For Large chicken breasts (7oz or 200g) 20-22 minutes.
Medium-sized breasts (5 – 6oz or 150 – 180g) 18-20 minutes.
The internal temperature should reach 165F or 74C if using a meat thermometer. If not, cut one of the breasts open and see if it is cooked. The meat should be white with clear juices running out.
Cover with foil for 5 minutes and allow to rest then serve.
