Delicious creamy chicken cottage pie recipe, using leftover chicken, oven-baked in a creamy sauce and topped with fluffy mashed potato. Easy to make and perfect for a family dinner.
We've got a great variation to the popular cottage pie recipe which is traditionally made using ground beef.
For this recipe, we've used some leftover cooked chicken, a mixture of vegetables, and mashed potatoes for the top.
The recipe is super easy to make and so tasty! It's very filling, and great comfort food too, and perfect for feeding a hungry family.
The flexibility of this recipe is great! You will see we've used a mixture of carrots, peas and sweetcorn. That's what we had available in our kitchen. Feel free to add some peppers, or other vegetables, fresh or frozen, and if you like cheese, sprinkle some of your favorite grated cheese over the top just before you put it in the oven.
This dish is also freezer-friendly so if you want to make ahead or plan your meals, simply freeze as a whole or in portions, defrost then bake when you're ready.
So let's get straight to the recipe and make this delicious creamy chicken cottage pie.

Ingredients
The Chicken Filling
2 tablespoons of olive oil or butter
2 teaspoons of dried thyme
1 large onion, finely chopped
2 cloves garlic, minced
1 stick of chopped celery
2 carrots, peeled and diced
½ cup or 75g frozen peas
½ cup or 75g frozen sweetcorn
2 cups or 130g of cooked chicken
⅓ cup or 40g all-purpose flour
2 cups or 480ml chicken broth
1 cup or 240ml whole milk or heavy cream
Salt and pepper to taste
The Mashed Potato Topping:
4 large potatoes peeled and cut into chunks
½ cup or 110g unsalted butter
½ cup or 120ml whole milk
Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat butter or olive oil over medium heat. Add onions, garlic, celery, and spices.
Cook until softened.
3. Stir in the carrots, sweetcorn, and frozen peas. Cook for a few minutes until the vegetables begin to soften.
Then add the chicken and broth.
4. In a cup, add the flour mixed with a couple of tablespoons of the broth and stir until there are no lumps. Then add the flour mixture to the pan with the chicken. Stir and combine.
5. Gradually add the milk (or cream), stirring constantly to avoid lumps. Continue cooking until the mixture thickens. Simmer for a few more minutes until the sauce is creamy.
6. While the chicken filling simmers, boil the peeled and diced potatoes in a separate pot until fork-tender. Drain the potatoes
and mash them with butter, milk, salt, and pepper until smooth.
7. Transfer the creamy chicken mixture to a baking dish, spreading it evenly.
Use a cookie scoop to scoop the mashed potatoes over the top.
It's at this point you can add some grated cheese over the top if you wish.
8. Bake in the oven for 20-25 minutes or until the top is golden brown.
9. Allow the cottage pie to cool for a few minutes before serving.
