These easy lemon cookies are so delicious, and refreshingly tasty with a nice cold glass of milk, or to have with a cup or tea or coffee.
The texture of these lemon cookies is lovely. They're a bit gooey on the inside from the cream cheese mixture, and the outer is crisp. You also get a nice hit of white chocolate in every bite from the chocolate chips, and of course a wonderful hint of lemon.

Ingredients
½ cup or 115g unsalted butter, softened
4 oz or 115g cream cheese, softened
1 cup or 200g granulated sugar
1 egg
1 teaspoon of lemon extract
2 cups or 250g all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 & ½ cups or 470g white chocolate chips
1 tablespoon of lemon zest
Instructions
1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, add the butter, cream cheese, sugar, and lemon zest.
Then beat with a mixer or wooden spoon until fluffy.
2. Add the egg and lemon extract to the mixture and beat until well combined.
3. Whisk the flour, baking soda, and salt together in a separate bowl.
4. Gradually add the dry and wet ingredients, mixing until combined.
5. Fold in the white chocolate chips until evenly distributed throughout the dough.
6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving 1 inch of space between each cookie.
7. Bake in the oven for 10-12 minutes or until the edges are lightly golden. The centers may appear soft but will continue to set as the cookies cool.
8. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a cooling rack.

These will keep fresh in an air-tight container for a few days. Alternatively, you can freeze them either before or after baking in an air-tight bag.
