You know when you just want a sandwich that's filling and doesn't take too much effort to make. You know the kind? The comforting kind, loaded with melting cheese, warm, and satisfying. The sort of sandwich you can eat all on its own as a snack or a supper.
Perhaps you want a sandwich you can eat alongside a hot tomato soup on a cold winter's day, or a warm toasted sandwich to serve for lunch, or cut into small portions and serve as party food.
What this panini does is fill you with joy from the very first bite with the delicious mozzarella cheese right through to the very last bite!
For this recipe, we've kept it really simple. It's layered with cooked, leftover chicken, sun-dried tomato pesto, and slices of mozzarella cheese. The combination of flavors is amazing. You get a slight tang from the tomato pesto, combined with the flavors of chicken and cheese.
The recipe is flexible for you to add a different pesto, such as green basil pesto, perhaps a little Tobasco sauce for an added kick, some bacon, whatever you like!
As for the cheese, we used mozzarella because when that melts, it is just heavenly!
Kind of like a pizza in a panini roll!
Now I know not everyone has a sandwich press at home. You can use a George Foreman Grill, or something similar. If not, there are instructions at the end for you to be able to make this is a regular oven too.
You can prepare these sandwiches ahead, wrap them in foil or plastic wrap, and freeze, or refrigerate until you're ready to warm them through in your sandwich press or oven.
So if you have hungry children wanting a snack after school or you're working late and don't want to fuss with making dinner, simply pop one of these pre-prepared sandwiches from your fridge or freezer and warm them up.

Ingredients
1 Tablespoon Sun Dried Tomato Pesto
½ Ball Mozzarella, Sliced
2 Panini Breads, Sliced
1 Cup left over Cooked chicken
Salt and Pepper to season
Instructions
Slice the panini bread lengthways and open out on the work surface.
Spread the tomato pesto on each open surface.
Lay the sliced mozzarella on 2 of the slices
Lay chicken pieces on top. Season with salt and pepper to your taste.
Put the other halves of the panini bread on top of the filling.
Put in the sandwich press for about 5-10 minutes until the cheese has melted and the bread is golden brown.
** If you do not have a sandwich press, wrap each sandwich up in foil and place on a baking tray.
Put in a preheated oven at 425F or 220C for 10 Minutes. When done, serve with some salad and potato chips. Enjoy!
