These cinnamon roll banana muffins only take minutes to make, and you can any over-ripe bananas too.
These muffins are really easy to make. It's a matter of combining the wet ingredients into the dry ingredients, making sure not to over mix, otherwise, you can loose that classic muffin texture, then simply pop them in the oven to bake.

These muffins obviously taste of bananas. However, the addition of the cinnamon butter swirl into the batter just before baking adds another flavor dimension to these breakfast-time muffins. We've also added a simple vanilla cream cheese glaze to drizzle over the top if you wanted to add a little decoration. By all means, leave that out if you just want a basic muffin for breakfast.

These muffins are great for enjoying anytime, not just for breakfast. For example, when the kiddies come home from school, it makes for a great snack, or if you just want something to go with your mid-morning coffee or tea.

Ingredients

For the muffins:
2 ripe bananas, mashed
½ cup or 110g unsalted butter, melted
¾ cup or 150g granulated sugar
1 large egg
1 teaspoon vanilla extract
1 & ½ cups or 190g all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon of ground cinnamon
For the cinnamon swirl:

¼ cup or 55g unsalted butter, melted
¼ cup or 50g brown sugar
1 teaspoon ground cinnamon
For the cream cheese glaze:

4 oz or 115g cream cheese, softened
½ cup or 60g powdered sugar
½ teaspoon vanilla extract
2-3 tablespoons milk
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix the mashed bananas, melted butter, sugar, egg, and vanilla extract in a large bowl.

- Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.

3. Combine the wet and dry ingredients, mixing just until combined. Do not overmix.

4. Mix the melted butter, brown sugar, and cinnamon for the swirl in a small bowl.

4. Fill each muffin cup halfway with the banana batter. Spoon a small amount of the cinnamon swirl mixture onto each muffin,

and then top with more banana batter. Use a toothpick or skewer to swirl the cinnamon mixture into the banana batter for a swirled effect.

5. Bake in the oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
6. While the muffins are baking, prepare the cream cheese glaze by whisking the softened cream cheese, powdered sugar, vanilla extract, and enough milk to achieve a drizzling consistency.
7. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

8. Drizzle the cream cheese glaze over the cooled muffins.

9. Serve
