Made up of just 4 ingredients, you can make these by hand or using a food processor, whichever you find most convenient, and you can also swap the lemon for orange, or almond extract, add some chocolate chips, or dried cranberries or nuts. The possibilities are endless so feel free to switch the lemon for anything you have available!

Ingredients
1 & ½ cups or 300g graham cracker crumbs (about 10-12 graham crackers)*
½ cup or 115g unsalted butter, melted
1 cup or 120g powdered sugar
Juice of 1 lemon
Zest of 1 lemon
* if you can't get Graham Crackers, use Digestive biscuits
Instructions
- Crush the graham crackers into fine crumbs. You can do this by placing them in a ziplock bag, crushing them with a rolling pin, or using a food processor.
2. Combine the graham cracker crumbs, melted butter, powdered sugar, lemon juice, and lemon zest in a mixing bowl or food processor.
Mix well, using a wooden spoon if you are doing it by hand, until all the ingredients are evenly incorporated.
3. Take small portions of the mixture, roll them into balls, and use the tines of a fork to press the cookies down.
4. Place the cookies on a baking sheet lined with parchment paper and refrigerate them for about 30 minutes to set.
5. Garnish with more powdered sugar or lemon zest.
Storage
Store any cookies in an airtight container in the refrigerator for up to 5 days.
