These mini cherry pies are incredibly easy to make.
This simple recipe came about because I had some leftover puff pastry which I didn't want to waste so I had a little think at what ingredients I had in my pantry and here we have some really simple fruit pies!
For this recipe, I have used some cherry jam, with whole cherries in the jam. Feel free to use whatever jam you have in your cupboard.
I've used ready-rolled frozen puff pastry. Be sure to defrost it fully at room temperature before trying to roll it out.
Sounds like an obvious thing to say, but if you try and unroll, even when it is just semi-defrosted, you will find the pastry might crack. So please take note!
I've made 6 pieces of these little pies. Depending on how small or large you make the pastry pieces will of course depend on how many pies you end up with.
These are great for a snack, I think tastiest when served warm. eat them on their own or with a blob of whipped cream or ice cream.
It's a handy way to use up any leftover pastry, and a quick way of baking something sweet when you don't want to go to a lot of fuss if you are pushed for time.

Ingredients
1 package ready rolled puff pastry
8 Tablespoons Cherry Jam
2 Tablespoons Sugar
2 Tablespoons Milk
Instructions
1. Preheat oven to 425F or 220 C
2. Line a baking tray with parchment paper
3. Remove packaging from pastry and gently unroll on to work surface
4. Take a knife and equally divide the pastry into 6 pieces using a sharp knife.
Note: You can make these mini pies any size you wish.
Place the pastry on the lined baking sheet.
5. Using a pastry brush, brush milk along the sides of each pastry piece
6. Divide the jam equally between the 6 pieces of pastry down the centre of each.
7. Fold each pastry over making sure the pastry is sealed around the sides.
8. Using a pair of scissors, snip a couple of holes in the tops so the steam can escape during baking.
9. Brush each pie with milk and sprinkle sugar over the tops.
10. Place in the oven for around 10 minutes or until the pastry has risen and is golden brown.
11. When ready, transfer to a cooling rack and allow to cool for at least 20 minutes.
*Warning: the filling will be extremely hot so make sure you allow to cool for a little while to avoid burning your mouth!
