I think most of us enjoy a nice slice of cake with a coffee or tea. Well, anyone who knows me will know I love cake!
So I decided I should make a few more cake recipes to share with you, and this blueberry and lemon cake is simple and easy to make.
I added a crumb topping just before baking to give it an extra texture.
The streusel topping is a lovely buttery mix of crunch and sweet and the sprinkle of oats just takes this cake to another level.
This is a quick and easy cake recipe.
We'll show you just how easy it is to make a simple cake from scratch without doing anything fancy and you just need a bowl and an electric whisk or wooden spoon for mixing.
For this recipe, we've used regular pantry ingredients so you shouldn't have any trouble looking for anything fancy to add to this cake.
We've used blueberry jam in the cake batter. Yes, you read that correctly!
If you've never tried doing this before, you must!
It's lovely! If you wish, you can always add fresh or frozen blueberries to the cake, just add them at the same time you see where to add the jam in the recipe instructions below.

Ingredients
For the Cake
4 tablespoons Blueberry Jam
1 ⅓ Cups or 165g All Purpose / Plain flour
1 ½ teaspoons baking powder
6 oz or 175g unsalted butter, room temperature
1 cup or 200g regular sugar
3 large eggs
2 tsp vanilla extract
1 lemon, juice, and zest
For the streusel topping
2 Tablespoons unsalted butter (chilled)
4 Tablespoon All Purpose / Plain flour
2 Tablespoon Regular sugar
1 Tablespoon rolled oats
OPTION
Swap jam for fresh or frozen blueberries as follows;
10 ½ oz or 300 g Fresh or frozen blueberries
Instructions
1. Preheat the oven to 350F or 180 C.
Grease and line a 9-inch loaf pan or 8-inch square pan. See here how to line a cake pan.
2. In a mixing bowl, add all the cake ingredients together and beat until combined.
3. Add the blueberry jam in a small bowl and microwave for 30 seconds to loosen it. Give it a stir and it should be more spreadable.
4. Fold in HALF of the blueberry jam and transfer half the cake mixture to the baking pan,
then add the remaining half of the blueberry jam and top with the remaining cake batter.
Smoothing out evenly.
5. Make the streusel topping by adding all the topping ingredients to a bowl (for the photo below I also added a pinch of cinnamon)
and rubbing together with your fingers until it resembles large breadcrumbs.
6. Sprinkle evenly over the top of the cake mixture.
7. Place in the oven for 50 -55 minutes. Test with a skewer to make sure it comes out clean and the cake is cooked.
8. Leave to cool for 10 minutes before transferring to a serving plate or cooling rack(if serving cold).
9. Slice and serve as it is or with a scoop of ice cream or fresh custard or lemon whipped cream.
