Easy oatmeal cookies taste amazing! Soft and Chewy on the inside and crispy on the outside, this basic oatmeal cookie recipe is great on it’s own or you can add chocolate, nuts or dried fruit. A simple classic cookie recipe.

Oatmeal cookies have always been a favorite of mine, freshly baked with a nice cold glass of milk!
This recipe uses regular pantry ingredients and is very simple to make.
We've made the recipe flexible, so you can add extras to the cookie batter, or simply leave them as they are. If you want to make a variety, perhaps to give to friends and family, just make this basic recipe up, and then at the end, divide the cookie dough into however many different flavors you plan to make and add the extras in the batters. It's that easy!
This was inspired by an oatmeal butterscotch cookie recipe over on our sister site, Lovefoodies. It's always such a popular recipe so we've simplified it so it's perfect for beginners new to baking cookies.

Ingredients
1 & ¼ Cups or 290 g butter, softened
⅔ cup or 125 g regular sugar
⅔ cup or 125 g brown sugar
1 Egg
1 teaspoon vanilla extract
1 & ½ Cups or 190 g all-purpose flour
1 Teaspoon Baking Soda
1 teaspoon ground nutmeg
½ teaspoon salt
3 Cups or 465 g quick or old fashioned oats
For the perfect, chewy texture use old-fashioned (or rolled) oats.
You can use quick oats, however, the texture of the cookie will change and be less chewy.
Instructions
Preheat oven to 375 F or 190 C.
In a large bowl, add the softened butter and sugars and beat until creamy.
Add the egg and vanilla, and continue to beat until combined.
Add the flour, salt, baking powder, and nutmeg. Combine well.
Add the oats and any optional extras such as chocolate or dried cranberries if using. Mix well until everything is combined.

Place golf-ball-sized dough on a parchment-lined baking sheet or silicone mat.

Bake for 11 minutes until golden brown
When done, leave them on the baking sheet for a couple of minutes before transferring onto a cooling rack.

This cookie below has white chocolate chips inside. So delicious!

Hint: Store in an air-tight container when the cookies have completely cooled.
Variations
With this basic oatmeal cookie recipe, you can add other ingredients to give you a different flavor and texture.
For the options below, you can choose any combination or just one other ingredient. All you need to remember is the total amount must not exceed 1 cup or 145g in weight. For example, you could add ½ cup of white chocolate plus ½ cup of dried cranberries, totaling 1 cup. This is the amount best suited to the quantities for this particular recipe for best results.
- White Chocolate Chips
- Chopped pecan nuts
- Chopped walnuts
- Peanut butter morsels
- Dried cranberries, sultanas, raisins

The tip to keeping cookies soft and fresh and soft is to make sure you store them in an air-tight container.
We also add a piece of fresh bread to the container and this also keeps the cookies fresh for longer.
